Aaseng nicely balances descriptions of those who were successful because of marketing (Ellen Gordon and the Tootsie Roll) or a specific recipe (Krispy Kreme donuts and their sugary aroma). He also makes clear how hard it is to make money, and keep making money, on any product. A few well-chosen sidebars document sweets that don’t get a whole chapter, like Twinkies and Life Savers.
